Cut eggplants lengthwise. Heat olive oil in a saucepan and fry the onions. Sprinkle salt and pepper over the onions. Once the eggplants are soft and brown, take them out and put them to a side.

You can use American Garden’s pre-made Marinara sauce like I did, or you can make it from scratch. Fry diced tomatoes, onions, garlic and ginger in a saucepan. Season the mix with salt, pepper and chilli flakes And blend them with a little bit of water.

In a separate bowl, mix together whisked eggs. Chop both cheeses and add them to the mix. In a baking dish, add cheese sauce, marinara sauce and eggplants. Add remaining shredded cheese on top of the eggplants. I stove-baked the dish for 10-15 minutes.
